


Handling Instructions
Clams and Oysters – short term storage – planning to eat them fresh:

Once removed from their beach, they keep best under ice in a well-drained cooler.

Don’t allow them to sit in fresh water for long, so if you won’t be able to drain the water before it submerges them, it would be better to keep them in a refrigerator, walk-in or with ice gel packs.

If you store them in a walk-in, you should protect them from the circulating air (even a good idea in a refrigerator) by covering them with a damp towel.

Don’t store them in a plastic bag or other air-tight container, remember they are alive and you want to keep them that way.

The ice packs are the best option while in transit when a cooler is not appropriate, such as during shipping.

Clams can keep up to a week, but taste best eaten within the first 3-4 days.

Oysters can keep up to two weeks, but taste best when eaten within the first week.
